Ingredients

Margherita Pizza Toast

  • 1 slice bread of choice - like sourdough, cob, sliced white or brown loaf etc
  • oil for toasting bread (optional) - if toasting in a toaster, you won't need oil
  • 1 tablespoon pizza sauce - shop-bought or homemade. Add more or less as needed
  • 30 grams (1 oz) mozzarella cheese - adjust quantity to preference
  • fresh basil, torn
  • salt and black pepper to taste

Pepperoni Pizza Toast

  • 1 slice bread of choice - like sourdough, cob, sliced white or brown loaf etc
  • oil for toasting bread (optional) - if toasting in a toaster, you won't need oil
  • 1 tablespoon pizza sauce - shop-bought or homemade. Add more or less as needed
  • 30 grams (1 oz) grated cheese - use your favourite type
  • 2-3 slices pepperoni - adjust the quantity according to the size of the pepperoni slices
  • 2-3 pitted olives, sliced (optional)
  • salt and black pepper to taste

BBQ Chicken Pizza Toast

  • 1 slice bread of choice - like sourdough, cob, sliced white or brown loaf etc
  • oil for toasting bread (optional) - if toasting in a toaster, you won't need oil
  • 1 tablespoon pizza sauce - shop-bought or homemade. Add more or less as needed
  • 30 grams cooked chicken pieces
  • 1 tablespoon BBQ sauce
  • few slices red bell pepper (capsicum)
  • 30 grams (1 oz) mozzarella cheese - adjust the quantity to preference
  • fresh basil, torn
  • salt and black pepper to taste

Parma Ham and Rocket (Arugula) Pizza Toast

  • 1 slice bread of choice - like sourdough, cob, sliced white or brown loaf etc
  • oil for toasting bread (optional) - if toasting in a toaster, you won't need oil
  • 1 tablespoon pizza sauce - shop-bought or homemade. Add more or less as needed
  • 30 grams (1 oz) mozzarella cheese - adjust the quantity to preference
  • 2 slices parma ham
  • small handful rocket leaves (arugula)
  • salt and black pepper to taste

Aubergine (Eggplant) Pizza Toast

  • 1 slice bread of choice - like sourdough, cob, sliced white or brown loaf etc
  • oil for toasting bread (optional) - if toasting in a toaster, you won't need oil
  • 1 tablespoon pizza sauce - shop-bought or homemade. Add more or less as needed
  • 1 slice aubergine (eggplant) - cut vertically from a whole aubergine
  • 1 tablespoon pesto - red, green or homemade
  • 30 grams (1 oz) mozzarella cheese - adjust the quantity to preference
  • fresh basil, torn
  • salt and black pepper to taste

Instructions

  • Preheat the grill of your oven and prepare a baking sheet with baking paper or foil.
  • Optional: Pan-toast one side of the bread over high heat. Adding olive oil to the pan is optional.
  • Spread a tablespoon (or more, depending on the slice size) of the pizza sauce onto the untoasted side of the bread.
  • Top each slice with any combination of your favourite toppings listed in the ingredients. Don't add the greenery (basil, rocket etc) just yet.
  • Season to taste.
  • Arrange the pizza slices on the baking sheet and let them cook under the grill until the cheese melts and the edges of the toast crisp up. Keep a close eye on it.
  • Top the toast with any additional toppings like herbs, fresh greens and a drizzle of olive oil.
