Ingredients

Avocado and salsa toast

  • 1 slice bread of choice - like rye, wholemeal, cob slice etc
  • ½ avocado
  • 3 tablespoons cottage cheese
  • 3 tablespoons salsa
  • small handful coriander - chopped

Salmon and dill toast

  • 1 slice bread of choice - like rye, wholemeal, cob slice etc
  • 3 tablespoons cottage cheese
  • 50 grams (2 oz) smoked salmon
  • sprigs of dill
  • black pepper to taste

Strawberry and honey cheesecake toast

  • 1 slice bread of choice - like rye, wholemeal, cob slice etc
  • tablespoons cottage cheese
  • tablespoons Greek yoghurt
  • 1 teaspoon honey and extra for drizzling
  • ¼ teaspoon vanilla extract
  • 50 grams (2oz) strawberries
  • 1 tablespoon roughly chopped nuts

Banana and honey cheesecake toast

  • 1 slice bread of choice - like rye, wholemeal, cob slice etc
  • tablespoons cottage cheese
  • tablespoons Greek yoghurt
  • 1 teaspoon honey and extra for drizzling
  • ¼ teaspoon vanilla extract
  • 1 banana
  • 1 tablespoon roughly chopped nuts

Tomato and basil toast

  • 1 slice bread of choice - like rye, wholemeal, cob slice etc
  • 3 tablespoons cottage cheese
  • 5 cherry tomatoes
  • 1 tablespoon pickled onions
  • balsamic glaze
  • fresh basil leaves

Fried egg and pesto toast

  • 1 slice bread of choice - like rye, wholemeal, cob slice etc
  • 3 tablespoons cottage cheese
  • 2 tablespoons pesto - green or red
  • 1 egg
  • ½ teaspoon red chilli flakes

Instructions

  • Toast the bread your way - pop it in the toaster, pan-fry with a touch of olive oil or use the oven's broiler.
  • Top each slice with roughly 3 tablespoons cottage cheese (whipped or unwhipped) and add your preferred toppings from the options above.
